METHOD
Step 1
Place a grill on medium heat.
Step 2
Combine all ingredients for the herb-garlic butter in a bowl. Season and mix well. Wrap in plastic wrap and chill until ready for use. Before serving, bring to room temperature.
Step 3
Place the cut sides down on a tray—season with oil. Place the bug’s shell-side-down on the barbecue. Cook the bugs for 6 minutes or until they are almost cooked through. Turn the flame off and cook flesh side down for 1 minute or until it is lightly charred.
Step 4
Transfer the bugs to a platter. Butter the bugs. Serve the bugs with any remaining butter and lemon wedges.

- One tbs chopped finely parsley
- 1 tsp finely chopped Oregano leaves
- One clove of garlic crushed
