What is Shawarma?

There are shawarma counters almost everywhere. Did you know the shawarma that we see today is not what it was originally? Shawarma was originally a Lebanese dish made of pita bread stuffed with meat, vegetables, spreads, and olives.

This Middle Eastern dish has undergone some changes over the years. The pita was replaced by maida/ or rumali/ and the masala mixture began to include various desi spices. One thing is for sure: the desi-style shawarma that we have today is delicious!

Shawarma Masala: Homemade Spice Mix for Shawarma.

Add the whole Kashmiri red chili, green cardamoms, black peppercorns, fennel (saunf), jeera (cumin), coriander (dhania), and cinnamon into a pan. Toasted them well.

After they have cooled, put the spices in a blender to grind into a fine powder. You now have a fresh, aromatic shawarma powder that is ready for use. Store the masala in an airtight container.
